If we haven’t already established this….I LOVE FALL!!! One of my absolute favorite Fall Meals is Dinner in a pumpkin! Its fun, its simple, its delicious, nutritious and…what better way to Trick Your Picky Eater than by eating dinner straight out of a pumpkin!? I know, isn’t it great!?

I make this dinner every single year on Halloween night and my family LOVES it! I am sure you are going to love it to! And those picky little eaters will gobble it right up!

The greatest thing bout this meal is, you can prepare it in advance! Halloween night gets NUTS! The costumes, the parties, the trick or treating…NUTS I tell you! SO, if you make this the night before, refrigerate it and stick it in the oven about 2-2.5 hours before dinner…voila! You got yourself a delicious meal without the craziness of prepping it on Halloween Night! Wahoo.

Ingredients:Β

10 inch pumpkin
2 lbs ground beef
2 T.Oil
2 T. Soy Sauce
2 T. Brown Sugar
1 package sliced mushrooms (approx 8 oz.) or 1 can.
1 1/2 Cups cooked rice
2 10oz cans Cream of Mushroom
1 Can Water Chestnuts
1 Onion Chopped
Salt and Pepper

Directions:

  • Cut off the top of your pumpkin and clean it thoroughly.
  • Sautee onion in oil until slightly clear.
  • Add meat and brown.
  • Drain grease, add soy sauce, brown sugar, mushrooms and soup.
  • Simmer for 10 minutes.
  • Add rice and Chestnuts.
  • Stir Well
  • Put in pumpkin and bake 2-2.5hours (until pumpkin is tender) at 350 in shallow baking dish. (You may want to cover your baking dish in tinfoil. The pumpkin can sometimes dye your baking dish orange).
