If we haven’t already established this….I LOVE FALL!!! One of my absolute favorite Fall Meals is Dinner in a pumpkin! Its fun, its simple, its delicious, nutritious and…what better way to Trick Your Picky Eater than by eating dinner straight out of a pumpkin!? I know, isn’t it great!?

I make this dinner every single year on Halloween night and my family LOVES it! I am sure you are going to love it to! And those picky little eaters will gobble it right up!

The greatest thing bout this meal is, you can prepare it in advance! Halloween night gets NUTS! The costumes, the parties, the trick or treating…NUTS I tell you! SO, if you make this the night before, refrigerate it and stick it in the oven about 2-2.5 hours before dinner…voila! You got yourself a delicious meal without the craziness of prepping it on Halloween Night! Wahoo.

Within the last few days, my son has decided that everything is better if it is slathered in “Dip, dip”. So, I am constantly on the hunt for  healthy and delicious dip ideas!
